Cupcakes for Lunch

So I will openly admit that I am one of those moms. The ones with a million boards on Pinterest with thousands of pins that I will probably never ever look at again. This isn't so when it comes to my monthly meal planning! I found two recipes that I was anxious to try and here are the leftovers in the lunchbox (which was actually requested by Monkey! 



IN THIS LUNCH: 

  • Chicken Parmesan Cupcake
  • Cucumber Salad
  • Frozen Blackberries
Okay, so I was skeptical about whether or not these little ''cupcakes'' would turn out. I've done work with wontons before and I hated it. Luckily the hubby made dinner last night and the Chicken Parm cupcakes came out perfectly! They were sooooo yummy! So I got the recipe for the Chicken Parmesan Cupcakes from Emily Bites. If you'd like the recipe for the Cucumber Salad it is available HERE. But I'll admit I think it could use some tweaking. Next time it gets made I plan to use one cucumber, two avocados, salt, pepper, and I want to purchase the marinated mozzarella balls and incorporate some of the marinade instead of the vinegar/olive oil mixture. I didn't taste any flavor from the balsamic vinegar. All in all though it was good and was really filling. Monkey totally gobbled it down!

  1. My daughter can't heat up food at her school. Have you tried the chicken parm cupcake cold? Is it good?

  2. Hi Jessica! My daughter doesn't get to heat up her food either. I have tried the cupcake cold and I personally thought it was great! Chicken is a meat that does really well cold and all these are essentially are is chicken, cheese, and tomato sauce. I think they are great for dinner and pack well for lunch. If you try them out I would love to hear what you thought. They started as a pinterest experiment and are now in our dinner rotation.

    1. I'm planning on making them this week! I do have another question. Sorry, I'm just cooking-challenged and really need specific instructions from those who know what they're talking about, LOL! Anyway, can these be frozen? If so, have you tried it? How was it? Could you please give me specific freezing and thawing/reheating instructions?

    2. Thanks for coming by again Jessica! I would say yes, they could be frozen. I personally never have more than 3 or 4 leftover so they get eaten for lunch next day. So I have not frozen them. If I were going to I'd simply be putting them in a freezer bag. I'd bring them out the night before to defrost in the fridge and reheat in the oven a few minutes till hot. Maybe 8 minutes or so at 350. My oven tends to run hot so just pop em back in a few minutes if necessary. Hope that helps!
