108 & Grub for the Hub

108



Monkey has been very enthusiastic about her lunches lately and now that I am making lunches for Dad she's pretty interested in those too. The sad part, we're getting to the end of the month so we are starting to scrape the bottom of the barrel on lunch fixins. Usually I plan out lunches for the whole month, but this month with her birthday party well, things went a bit off course and I never got around to it! But, hopefully these lunches will be up to par.



IN THIS LUNCH: 
  • Apple Slices
  • Mini Ravioli (tomato sauce in green container)
  • Halved Tomatoes
  • Turkey Pepperoni
  • String Cheese (cut into rounds)
Initially, I wanted these to be skewers...but the string cheeses weren't cooperating! So I gave up and she got all the pieces I had ready for the skewers. Hooray for lunch fails! 

Grub for the Hub

So my bento blog friends all helped me come up with this segment name and my husband liked it too, so all the posts with lunches for my husband will have the Grub for the Hub title. :) I hope this will make finding them easier when you search. 


IN THIS LUNCH:
  • Garlic Hummas
  • Carrots & Pepper Strips
  • Parmesan Cous Cous
  • Chicken Tenderloins
Color wise this lunch IS a bit drab, but it's full of flavor and I think he'll enjoy it. He LOVES chicken so that's always an easy go to when thinking about what to cook for him.

.097 -- New Bento Toys!

So after Monkey's My Little Pony Party yesterday, decided to check the mail. I was super excited when my husband brought everything in and my bento order had arrived! So I decided to skip my original lunch plan for something that I could use my new tools on.


IN THIS LUNCH:

  • PB&J "Sushi" (Got this idea from my friend Beau over @ Lunchbox Dad. Check out his post including a how to HERE)
  • Sweet pepper slices
  • Grapes
  • 2 slices of Mozzarella cheese
  • Chocolate Almond Milk
I always like finding new ways of presenting food and the sandwich roll ups will be a fun lunch addition for Monkey. I think I might try it with meat & cheese sandwiches too and see how that goes.

2014 -- 030

A Bear-y Good Lunch!

So this lunch was a completely happy accident that I am really in love with! I asked my husband to put on an egg to boil for me this morning and next thing I know he asks if he could try to use the bear mold on it. I have had nothing but trouble with those molds but decided, what they hey, let's go for it! I think he did a pretty good job getting that little bear mold to work (better than any of my attempts!) and from there we decided we wanted a bear lunch! 


IN THIS LUNCH: 
  • Bear Shaped Sunflower Butter and Jelly Sandwich
  • Bear Shaped Hardboiled Egg
  • Carrots
  • StrawBEARies. :P 
  • Yogurt Parfait (Greek yogurt, cut grapes, slivered almonds, and some sprinkles!).
I'm not sure why but this lunch just makes me sort of happy. Not sure if it's the shapes or the colors, but I really ended up loving this one! I guess I owe my hubby a thanks for wanting to use that egg mold! :)

2014 -- 025

Just Another Snow Day

Well, we've now been stuck at home for 5 days with the snow and ice. I personally don't mind it much but Monkey seems to be getting bored with it! Hopefully things will thaw out enough for school tomorrow! But, just because there wasn't any school doesn't mean we aren't having lunch. Here's what I put together (and would have sent) for lunch. 


IN THIS LUNCH:
  • Turkey/Swiss Meat Rollups (2 pieces of lunch meat, 1 piece of cheese halved)
  • Cucumber Slices (about 1/4 cucumber)
  • Cranberry Sauce (about 3 tbsp)
  • Handful of Pretzels
  • 1 kiwi
  • 1 Tbsp Dijon Mustard
We also had a great dinner tonight of Cheese Tortellini Soup. It was warm, rich, creamy, and very filling. The recipe is available HERE (or in our recipe section) and you can also PIN IT for later.

2014 -- 015

The Quick and Easy "Classic"


By the time lunch making rolled around last night, I was exhausted. Gotten up at 2:30 for work, went to my full day there, then rushed to an ultrasound appointment, spent way too long at the bank, and of course nabbed monkey from school, and went to game night which I have been missing. Was a nice day but oh so tiring! My awesome husband stepped up to make a lunch for me since I was so tired so he decided to ''go with the classic'' sandwich. :-P All I did was tell him what to put with it. He even took the picture. :-)



IN THIS LUNCH: 
  • Whole Wheat Bread with Sunflower Butter & Blackberry Jelly, 
  • Tillamook Pomegranate Blackberry Yogurt w/ sliced almonds,
  • Raisins and one prune
  • 100% Juice Box (not pictured)

2014 -- 012

Something Old, Something New

So my husband brought home this really fantastic fresh baked hoagie rolls for our pulled chicken sandwiches. They were so fantastic that I was willing to break with my normal wait two days to pack leftovers rule. We did chicken with BBQ sauce, cooked onions, and bacon all mixed up together. Healthy, no...magic on a hoagie roll? Yes. Tonight was a bit of a indulgence night, which in my opinion is just a good thing for life.


So I took the other half of Monkey's roll and filled it with some leftovers and got that baby in the box! She was enjoying dinner so much I couldn't imagine that she wouldn't like having it again for lunch. In addition to this I snagged her a couple of the crispier leftover fries (she specifically asked if she could have some in her lunch) and tossed them in as well. She wanted Brussels sprouts, but we polished them off at dinner (they never last around here). 


The third aspect of our lunch today was inspired by something I have been really crushing on that I've seen online, the Grape Parfait Crunch by MOMables. The recipe I saw took vanilla yogurt, two types of grapes, and granola. Looked delicious and I wanted to make it. Come to find out, I had no yogurt and one kind of grape...and no granola. I could have made some myself but after a long day dealing with my broke down car I just wasn't feeling that. So I went with what I had! 


This grape parfait has red grapes, a dollop of whipped cream (I put a little too much, but she won't mind :P), dried cranberries for a little tartness, and slivered almonds on top for the ''crunch'' aspect. This will be her dessert and calorie wise whipped cream is one of those lesser evils in my book. So, just to recap...

IN THIS LUNCH: 
  • Leftover Pulled Chicken Sandwich
  • A few leftover crispy curly fries
  • My version of a grape parfait crunch
  • Organic Milk (not pictured)

2014 -- 009

Bagel Sandwich

I don't know about you, but sometimes I am just NOT in the lunch packing mood. That's when my month of planned out lunches goes out the window and I stare blankly into the fridge debating what I can pack besides a sunflower butter & jelly sandwich. I don't know if this is MUCH of an improvement, but I'd like to think it's a small step up!


IN THIS LUNCH: 
  • Mini Bagel Sandwich: Cream Cheese, Pepperoni, and Cucumber Slices
  • Tillamook Strawberry Yogurt w/ sprinkles
  • Frozen Blueberries
  • 100% Juice Box (not pictured)
This lunch took maybe 10 minutes to throw together which was mostly the sandwich! I was informed later that cucumber/pepperoni is Monkey's favorite sandwich (I don't recall ever making her one before) she's so silly!

Treat Day!

We are still going through training week and I am finding that I am super tired and definitely needing to make a trip to the store! So today we have another improvised lunch featuring whatever I could find in my pantry and fridge. I think in general it came out alright!! It also features a monkey made treat for treat day! 



IN THIS LUNCH:
  • Mini Bagel Sandwich
  • Mixed Greens Salad w/ tomatoes & Pomegranate Blueberry Vinaigrette
  • Unsweetened Applesauce with Cinnamon
  • Small piece of cake (made by monkey!!)
  • Kefir Smoothie
This box came home almost empty! There was just a little bit of salad left after school and you know, I am okay with that. She at a good 85% of her salad. She was thrilled to see that her treat had made it into a box. Overall this is a lunch I would even pack for myself! I think it looks and sounds delicious.

Look, Grab, Pack

So I'm calling today's lunch, ''Look, grab, pack'' because I didn't pack it last night! I got tired, went to bed, and this morning remembered that I didn't pack a lunch for Monkey! Instead of throwing in the towel and letting her have school lunch today (who know's what they're having and what kind of gunk it's made with) I did a ''look, grab, pack''. So simply, you look at what you got in the fridge, try to cover all your food groups, and run with it. No pre-plan (the pre-planned lunch I didn't feel like making). So here is what Monkey got today!


IN THIS LUNCH:
  • Fruit: Cut Apples, Sunburst Tomatoes
  • Dairy: Vanilla Yogurt (also protein) w/ fall sprinkles, String Cheese (also has protein), Milk (not pictured)
  • Veggies: Baby Corn
  • Grain: Butterfly Crackers
  • Protein: Sunflower Butter (not pictured for dipping apples and crackers). 
As I started I was thinking about fall and how I am a bit sad to see summer go. So accidentally, we've got a goodbye summer (the single purple butterfly silicon cup) and hello fall (all the colors and the sprinkles). The sprinkles by the way are green, orange, and have little brown pumpkins which I picked up in my Target's dollar area! I think in general we covered all our bases and it's a lunch that should come home empty.

Breakfast Lunch

If there is one thing my Monkey loves, it's breakfast. Whether it's at actual breakfast time, lunch, dinner, or snack, she doesn't care. Today will feature the first breakfast lunch of the 2013-2014 school year! I don't know about your kids, but pancakes are ALWAYS a good thing in my house. Now that we're getting so close to fall I have been chomping at the bit to start working with pumpkin again, a family favorite around here. Usually the standby pumpkin recipe in this house is Honey Oatmeal Pumpkin Muffins. If you click the name of them it'll take you right to our recipe! They're delicious, made from scratch, aren't made with granulated sugar, and typically don't last long in this house! If you haven't tried them I would STRONGLY recommend them. Today however we tried something different! 


These might look like the Honey Oatmeal Pumpkin Muffins you see on the recipe page but they aren't!

IN THIS LUNCH: 

So while making this lunch it made my house smell AMAZING. I didn't follow the recipe EXACTLY. It just says ''milk''. I assume that means conventional cows milk which we don't drink anymore. I used my unsweetened vanilla almond milk and they still turned out great. Also, instead of making cute little pancakes out of them, I sprayed my mini muffin pan, added approximately 1/8 cup of batter to each spot, and baked at 350 for about 12-15 minutes. I simply used the toothpick method to assess them. They're delicious and if you are looking for a new pancake recipe I think this one is a winner!

Best of 2012-2013 School Year!

Best of!


It's the beginning of a new school year. One of the things I really enjoy doing is looking over old menus and old pictures of lunches I made before. I decided that since I am now in a new location and my old entries aren't available to all of you, I should do a ''Best of'' entry! Here I will share with you all of my favorite lunches from last school year!


LUNCH #5

In this Lunch: Quesadilla, organic grape tomatoes, avocado, organic plum, organic tortilla chips, and a Juice Box. 

The tortillas were life balance. I have yet to find a tortilla that is perfectly healthy but these ones are fortified with 23 vitamins and minerals, are full of fiber, as much calcium as a glass of milk, and even have some omega 3's! The Cheese was a local brand which uses milk from cows that are hormone and unnecessary antibiotic free. The avocado was mashed with a little bit of lemon juice to keep it from browning. The containers and the silicon cups are both Dollar Tree finds! This lunch was a big hit with monkey! 

LUNCH #15

IN THIS LUNCH: "Brunch for Lunch" Two pancake muffins, sliced granny smith apple, 1/4 cup fat free cottage cheese, 2 Tbsp of Sunflower butter (for dipping apples), and a Fruit & Yogurt smoothie.

Pancake Muffins: Take your favorite pancake batter and throw in whatever fruit you have. Berries work really well! In here we have a raspberry w/ flaxseed and blackberry w/ flaxseed.  
*A little lemon juice prevents apple browning. 

LUNCH #16

IN THIS LUNCH: 'A'pricot preserve & sunflower butter 'A' shaped sammy, 'A'pplesauce, 'A'nnie's Cheddar Bunnies, 'A'nts on a log, and 'A'pple carrot juice.

Okay, I'll admit the cheddar bunnies were a stretch but hey sometimes you have to get creative! We always like to buy big jars of the unsweetened applesauce and portion it out. It's far less expensive than the individual packs! Monkey loves a little cinnamon on top of hers. 

I felt like this was a fun way to connect to her classroom. They spent that day learning all about 'A' so an 'A' lunch just seemed fun. 

LUNCH #23

IN THIS LUNCH: Pepperoni Pizza Pita, small salad w/ dressing, mixed fruit, a Chobani Champions Vanilla Chocolate Chunk yogurt, and an Apple & Eve Big Bird's Apple Juice Box. 

In our house we LOVE Chobani yogurt, especially the Chobani Champions and Chobani Tubes. They are delicious! The main part of the lunch is a small salad w/ french dressing. We were excited to try Italian Herb Pocket Thins for our Pizza Pita. Inside is organic tomato basil sauce, turkey pepperoni, a slice of ultra thin swiss and baby spinach.  

We like buying flats of berries and keeping them in our freezer. If packing lunch the night before they will often be defrosted by the next morning. If not then, by lunch. 

LUNCH #24

IN THIS LUNCH: Turkey 'ghost'which, organic grape tomatoes, sweet potato chips, and some frozen mixed fruit, and an organic valley chocolate milk.  

We use Dave's Killer 21 grain bread, we love it! This sandwich is turkey with mayo and the swiss cheese on top of the sandwich to make the ghost (we simply used cookie cutters, raisin eyes, and pepperoni mouth). 

When berries aren't in season (and I run out of my own frozen berries) I buy the pre-frozen varieties for smoothies on the frozen food aisle. This lunch was fast! Maybe 6 minutes to put together. 


LUNCH #28

IN THIS LUNCH: Mini Bagel sunflower butter and apricot preserve sammy w/ an adorable pumpkin pick, baby corn and grape tomatoes, "candy corn" parfait, and organic chocolate milk. 

This was our first use of the mini bagel! It has become a staple in our home. We really love them, not just as a way to spruce up a sandwich, but for their size. We also did cream cheese/pepperoni sandwiches on these bagels which are delicious! Anything you'd normally put on a sandwich you can use this little bagel for! The pumpkin pick was from the dollar store! 

One of my favorite things about this lunch is the candy corn parfait! It still sticks out to me as a favorite item that I made last school year. It was very simple! Peach segments, orange segments, and Chobani Champions Banana Honey greek yogurt for the top. The colors really brought to life the idea of ''candy corn'' and it was a nice little treat in her box! Much better for her than actual candy corn. LOL. 


LUNCH #26 

IN THIS LUNCH: Crackers, Turkey Pepperoni, Cheddar Cheese Pumpkin Patch, Organic Baby Carrots, Fat-Free Cottage Cheese, Gummy Spider, and Witch's Brew!

Our more direct ''lunchable'' creation. Pumpkin shaped cheese to celebrate Halloween. My monkey loves baby carrots so those were in there. We tossed in a gummy spider (just one) for some more Halloween fun. The drink was actually one of our favorite seasonal treats! Pumpkin eggnog! I added a couple drops of green to it, and voila ''Witch's Brew''. 



LUNCH #33

IN THIS LUNCH: Annie's Organic Crackers w/ ultra thin swiss bears, leftover lemon-herb chicken [from dinner], peas [from dinner], Nancy's Organic Yogurt [getting close to expiration date] w/ fun Halloween sprinkles, and Organic Valley Chocolate Milk. 

This was one of those leftovers sort of lunches. Never will I have to pack another lunchable! We love using our own crackers, cutting the cheese into fun shapes with our cutters, and using our own meat. She could choose to put it on the crackers or sometimes we would substitute with pepperoni, cut ham, etc.. My monkey LOVES peas! This is actually plain yogurt that was getting close to it's expiration date...so I threw a few fun halloween sprinkles (purple, black, and ghosts!) on top for a little added sweetness and fun. My daughter isn't a big fan of plain yogurt, but she gobbled this down. 

LUNCH #41

IN THIS LUNCH:  "Banana Dog", Tomatoes, Ants on a log, Organic Cookies, and a V8 Fusion Juice Box.

My daughter had requested the use of hot dog buns in her lunches. Apparently the kids at school eat a lot of things on buns? She said she wanted to feel more like them. These are 100% Whole Wheat buns smeared with sunflower butter w/ a banana and a light drizzle of honey. She LOVED it. This is a very easy lunch and I bet your kids would be shocked to find this!

Sunburst tomatoes are always a hit in our house. 



LUNCH #45

IN THIS LUNCH: Bunnies in a meadow, an orange, blueberries, peas, carrot chips, hard boiled egg, Organic Fruit & yogurt smoothie pouch, and a 100% juice box. 

This actually wasn't a school lunch. She was off this day for a holiday, but it's still a favorite. I'd seen on Pinterest someone using rice cakes, blue cream cheese, and goldfish for fish on water. I thought it was super cute! Since we eat bunny crackers, I thought bunnies in the meadow would be a great alternative. We used soy crisps, cream cheese w/ green food coloring, and the organic bunnies. Used blueberries to make a ''sky'' and a peeled orange for a ''sun''. We also used an egg mold on the hard boiled egg to make it into a bunny (I'll include another pic), and carrots and peas because those are her favs! 

Egg molds are definitely more difficult to use than I imagined! Luckily I was able to get some really helpful tips from blogging friends that made this my best example of a molded egg (this was my 3rd try!). 

The secret, I'll share. My eggs were actually too small for the mold. You have to peel the eggs and get them into the mold while still warm! Also, we stuffed one side of the mold with a paper towel so that it would fill the entire mold, since our eggs were too small. Then submerge the entire mold in cold water and let it sit! 
Phew! Lots of work, but boy are they cute! 

LUNCH #100

IN THIS LUNCH: Turkey & Swiss Roll Ups, Pretzels, Deviled Egg, Cranberry Sauce w/ orange zest, and a Chocolate Almond Milk.

Monkey LOVED this lunch! The turkey and cheese roll ups are a great lunch alternative to the regular ole sandwich. I'll pack it with crackers or pretzels. 

This was definitely a head nod to Thanksgiving with the cranberry sauce and deviled eggs. Thanksgiving staples with our family and really easy and fun for lunches! Monkey was so excited to get deviled eggs her in lunch she actually squealed when I showed them to her before school (so she wouldn't shake her lunch up too much)!. 

Alright guys, that's it for my favorite lunches of 2012-2013. They weren't always pretty but they were always delicious! I'm looking forward to using some of these ideas again in the coming school year as well as adapting them to try out some new concepts! I hope you can take away some lunch packing inspiration!
